Wilson's Pub Expands Hours

Happy hour menu coming soon

Wilson's Pub in Collinsville has now officially expanded its hours. 

The 3 River St., Collinsville business, which in late June opened at the former Fireplace Cafe location, is now open from 11:30 a.m. to 11 p.m. Sunday through Thursday. On Friday and Saturday, the pub will open from 11:30 a.m. to 1 a.m. the following morning. 

Owner/Manager Esther Witkos said she feels the feedback so far — even constructive criticism — has been great.

"Everything so far has been really positive," she said. 

For now, the pub is focusing on a relatively small menu with items such as a Classic Burger, BBQ pulled pork, Grilled Portobello Mushroom, Jumbo Chicken Wings, Chickpea Hummus, and a Roast Turkey Breast Sandwich. Pasta choices include Penne Vodka and Pub Mac & Cheese. 

Slider appetizers include choices of Black Angus beef, Crispy Buffalo Chicken, mini beef hot dogs and Grilled Portobello Mushroom.

Prices range from $7 to $12.50. 

In approximately a week, the pub will also offer a special 4 to 6 p.m. Happy Hour menu, Witkos said. 

She also noted that it's great to be part of the downtown Collinsville community. 

"I'm just psyched to be here," she said. "My goal is to someday be the female version of Norm from Cheers." 

The restaurant's name is a tribute to longtime Fireplace Cafe owner William H. "Bill" Wilson Jr.
