Dessert Tray: Lemon Pie from La Trattoria

Chef Bev Tuller shares the perfect summer recipe.

It’s an inaugural event at . Their amazing dessert chef, Bev Tuller, is introducing a new Lemon Pie. “It’s perfect for the summer," she said. "The refreshing flavor of lemon in a creamy dessert, with a little crunch. Yummy!”

Chef Tuller offered About Town a bite. It’s rich, but light with a sweet crunchiness at the end. Tuller is right. It is yummy.

While Tuller is likely to give the Lemon Pie her own creative touches in the future, this original recipe came from America’s Test Kitchen. For now, she dresses it up by serving the pie with a raspberry sauce and maybe a little fresh whipped cream.

Lemon Pie

Ingredients

Filling

5 Eggs

1 ¾ cups Sugar

1 Tablespoon Fresh Lemon Zest

3 Tablespoons Fresh Lemon Juice

2 Tablespoons Cornmeal

¼ teaspoon Salt

1 teaspoon Butter, melted & cooled

Crust

Chilled pie crust: make your own like Chef Tuller does or purchase a ready-made one

Topping

1 Tablespoon Sugar

Pureed Raspberries

Fresh Whipped Cream

Tools

9” pie pan

Large bowl

Foil Paper

Directions

Preheat oven to 375 degrees F. Place a rack in the middle of the oven.

Whisk eggs in bowl. Slowly whisk in sugar, lemon zest, lemon juice, cornmeal and salt. When these ingredients are blended together, whisk in the butter. Let the mixture sit for 1 hour.

Line chilled crust with two pieces of foil and pie weights. Bake the crust until it is dry and light, about 25 to 30 minutes. Remove the weights and the foil. Reduce the oven temperature to 325 degrees. 

HINT: The crust MUST be warm when the filling is added.

Whisk filling to recombine. Pour filling into the still-warm pie shell. Bake the pie until the shell is light brown and the center of the filling jiggles slightly when shaken, about 35 to 40 minutes.

When the pie is done, sprinkle the top with sugar. Cool the pie completely before serving. Serve the pie with pureed raspberries and/or a little fresh whipped cream.
